Eggs stuffed with herring.

Ingredients:
4 eggs hard boiled.
parsley leaves.
For stuffing:
1 big herring, marinated or salted, drained, minced.
4 small potatoes, boiled, peeled, chopped.
2 small carrot, boiled, peeled and chopped.
2 small cucumbers, marinated or salted, chopped.
4 tbsp green peas, tinned.
5 tbsp mayonnaise.

Method:
1. Cut the eggs into halves horizontally and slip out yolks into a small bowl. Mash yolks with a fork. Set aside eggs whites.
2. Mince herring. Mix with mashed eggs yolks. Fill eggs whites with the mixture.
3. Put into bowl chopped potatoes, carrot, cucumbers and green peas. Top with the stuffed eggs whites. Season with mayonnaise. Decorate with parsley leaves and serve.
