1 1/2 pounds dried white beans
3 tbsp olive oil
3 cups diced onions
1 cup grated carrots
1 cup celery, chopped
1 cup potatoes, cubed
1 pound smoked ham hock
parsley sprigs, dill, celery, bay leaf, thyme sprigs
Salt and freshly ground pepper to taste
1. Soak beans and place in a large pot. Add water to cover by 4-5 inches. Soak overnight.
If you forget to soak the night before, just put in a pot of water and boil for a few minutes, cover with lid and let sit for about an hour.
2. Pour water in the pot, add beans. Cover and cook until beans are tender.
3. In a skillet, fry onion, carrot in olive oil until gold. Add to the pot with beans, add the ham hock and cubed potatoes. Simmer soup, covered for about 0,5 hour. Remove ham hock. Cut meat from ham hock into small pieces and return to pot. Season to taste with salt, greenery and pepper. Makes about 8-10 servings.
