Cold Soup with carrots, beet and sour milk.
✔ 4 fresh young beets roots with leaves, peeled, minced.
✔ 3 fresh young carrots roots with leaves, scraped, minced.
✔ 6 fresh cucumbers, chopped into strips.
✔ 1 tbsp green dill, chopped.
✔ 2 tbsp green onion, chopped.
✔ 1 - 2 tsp lemon juice.
✔ 1,5 litres (3 pint) - water.
✔ 2 cup sour milk, not sweet (Clabber - Milk which has soured to the point where it is thick but not separated).
✔ salt, sugar to taste.
1. Put beets and carrots into hot water with lemon juice and bring to boil. Cook for 10 - 15 minutes. Take away from the heat, set aside to chill.
2. Put remaining ingredients in to cold beet and it's decoction.
3. Pour the sour milk into bowlwith m ix, add chopped greenery and salt, stir well.
4. Serve cold.
