White Bean Soup with mushrooms.
Making a pot of soup is a perfect solution for a healthy, hot meal. There are dozens of different soups that you can make.
✔ 1 1/2 pounds dried white beans
✔ 3 tbsp olive oil
✔ 3 cups diced onions
✔ 1 cup grated carrots
✔ 1 cup celery, chopped
✔ 1 cup potatoes, cubed
✔ 1 pound mushrooms
✔ arsley sprigs, dill, celery, bay leaf, thyme sprigs
✔ Salt and freshly ground pepper to taste
1. Soak beans and place in a large pot. Add water to cover by 4-5 inches. Soak overnight.
If you forget to soak the night before, just put in a pot of water and boil for a few minutes, cover with lid and let sit for about an hour.
2. Pour water in the pot, add beans. Cover and cook until beans are tender.
3. In a skillet, fry onion, carrot in olive oil until gold. Add to the pot with beans, add the mushrooms and cubed potatoes. Simmer soup, covered for about 0,5 hour. Remove mushrooms hock. Cut meat from mushrooms hock into small pieces and return to pot. Season to taste with salt, greenery and pepper. Makes about 8-10 servings.
